“Very meaty and tender” is how Jerry Gibson describes his ribs. “We’re the only ones that offer five flavors of barbecue sauce,” Gibson said. “We have mild, sweet, apple-licious, hot and killer.” Pigfoot BBQ Company is one of eight grillers participating in the Lake in the Hills Rockin' Ribfest, scheduled July 7 to 10, at Sunset Park, 5200 Miller Road. Gibson owns and operates Pigfoot BBQ Company with his wife, Debbie. The couple live in West Salem, Ohio, and started competing in rib cook-offs in 1982 in Cleveland, Ohio, at the National Rib Cook-off. He has appeared on the Food Network, and has cooked for many celebrities over the years, he said. Gibson said he has created a mild rub that he applies to the ribs before cooking. His rub …
Joe and Sheila Henderson, owners of Smokin' Joe's Hog Wild BBQ in Mansfield, Ohio, will be among the vendors at this year's Rockin' Ribfest.
Joe Henderson and his wife, Sheila, started cooking ribs in 1988. Joe says their ribs have a “savory flavor.” “We make our own rub on site,” Joe Henderson said. “It’s a nice, spicy rub, and then our ribs are smoked with hickory wood. We have a sweet sauce – made with our recipe – with six different levels, from really mild to really hot.” Joe said to make his sauce hotter, he just adds more pepper. Smokin’ Joe’s Hog Wild Barbeque company is one of eight pit masters participating in the Lake in the Hills’ Rockin’ Ribfest from July 7 to 10, at Sunset Park, 5200 Miller Road. Like five other grillers, Smokin’ Joe’s visits the Naperville Ribfest one week prior to the LITH event, and then travels to the Rockin' Ribfest. “We come over to Lake in …
