Want to Make Your Own Ribs? Check Out This Recipe

A recipe from a Huntley couple that has won first place at BBQ competitions.

This recipe, from the grill pit of Craig and Margarita Rehr, yields two slabs, with a portion size of three to four bones.

Ingredients:

  • 2 tsp. onion powder
  • 2 tsp. garlic powder
  • 2 tbsp. paprika
  • 1/2 tsp. cayenne
  • 1/2 tsp. celery seeds
  • 1/2 tsp. dried cilantro
  • 1 tbsp. chili powder
  • pinch of salt
  • 1 tsp. pepper

FOILING RIBS:

  • 2 cups brown sugar
  • 1/2 cup honey
  • 1/2 cup butter

  • Two slabs of spare ribs

Cooking method:

Mix rub ingredients in a bowl. Trim excess fat off ribs and remove membrane. Lightly spray ribs with cooking spray. Lightly salt and generously apply rub all over ribs. Let ribs sit at room temperature for an hour. Start smoker and get temperature to 225 degrees. Put ribs on smoker and cook for 3 hours. Pull ribs off, foil using ingredients for ribs and put back on smoker, meat side down. Smoke for an additional two hours. Remove ribs from smoker, remove foil and discard. Discard all juices that are in foil. Put ribs back on smoker for an additional hour, checking for doneness after half an hour. Use your favorite barbecue sauce during last 10 minutes of cooking.
