Spring has finally sprung here in the Chicagoland area.  Lucky for us that means Farmer’s Markets with fresh fruit and veggies will be springing up all around us.  The Farmer’s Market in East Dundee will be opening in just a few weeks over Mother’s Day weekend.  Let’s take a look at some important facts about eating those fruits and veggies.

Seven or more portions of vegetables and fruit a day means a 42 percent decreased risk of a percent lower risk of heart disease and a 25 percent lower risk of cancer.

Vegetables have a larger protective effect than fruits. Veggie lower risk by 16 percent and fruits by 4 percent.

If you want to make just one change to your diet to dramatically improve your health, adding in more vegetables is a simple way to do so.

Even though vegetables have been proven to help lower your risk of chronic disease and support longevity, most Americans are not eating nearly enough of these natural, relatively inexpensive superfoods.

The latest data shows that nearly 23 percent of Americans report consuming vegetables and fruits less than one time daily, with a median vegetable intake of just 1.6 times per day overall.

Adding in more vegetables to your diet is a simple and powerful step to dramatically improve your health. Vegetables are quick to prepare and come in so many different varieties that they should suit virtually everyone’s tastes.  And now that spring has sprung access to fresh locally grown great veggies is easier than ever!

This is great motivation to eat more veggies.  The results are so dramatic that researchers call them “staggering.”

Many of these facts were adapted from a recent article on Mercola.com.  But you can find these scientifically based research studies in many respected journals and other current publications.  The final authority on this is you in terms of how your body responds. But, remember your mom saying “eat your veggies they’re good for you”?  Of course you do and guess what?  As always your mom was right, EAT YOUR VEGGIES they are good for you!
