Portobello Mushroom Burgers

Perfect for those who don't eat meat.

For vegetarians, or people who don't eat meat with every meal.
This is a good recipe for holiday weekends when you're attending many barbecues and need a break from meat.
 
Portobello mushroom burgers:
 
For each serving, you need:
1 portobello mushroom cap, rinsed and patted dry
2 Tablespoons Italian salad dressing (or any oil-based dressing you prefer)
1 slice provolone or swiss cheese
1/4 of a large red pepper pepper, seeded
optional: 1/2 green jalapeno, seeded
              avocado slices
 
Put salad dressing in a sandwich size baggie. Add mushroom cap and let marinate 15 minutes to 2 hours. Turn over once in a while.
When ready to grill, place mushroom cap and peppers on medium heat.  Grill for 7 minutes, then turn over. Grill for another 7 minutes, until mushroom gives in to pressure when poked. (It should be soft, but not mushy) Add slice of cheese, and cook for another 2-3 minutes. Place on bun with peppers. Add avocado. I prefer Arnold's Sandwich Thins instead of regular hamburger buns.
